Apple Cobbler

6 large Granny Smith apples, peeled & sliced
2/3 cup sugar
1 tsp. cinnamon
1 tsp. vanilla
1 tsp. lemon peel
1 tsp. lemon juice
1/2 tsp. nutmeg
pinch of salt
2 Tbs. tapioca flour

Streusel Topping

2/3 cup white sugar
1/2 cup brown sugar
1/2 cup and 2 Tbs. flour
2 tsp. cinnamon
2 sticks cold butter


For the Filling: Combine all the ingredients in a large bowl. Spray a 9x13"
baking dish with non-stick spray and fill with apple mixture.

For the Streusel: Combine sugars, flour and cinnamon in food processor. Cut
in butter until mixture is crumbly. (You can do this in a mixing bowl
also…do not over work the mixture, though…It should resemble small peas!)

Top Cobbler with Streusel mix. Bake at 350 degrees for 45 minutes. Serve
hot.
