This recipe appeared on a 1948 postcard from a series of 16 entitled "Famous Recipes from Famous Eating Places". These cards came free inside packages of Aunt Jemima Pancake Mix. |
CHERRY PIE |
RICH PASTRY PIE CRUST |

2 cups fresh Colorado cherries, pitted |
2 1/2 cups sifted flour |

1 1/2 cups sugar |
1 teaspoon salt |
|
1 tablespoon flour |
3/4 cup shortening |
|
1 tablespoon butter |
1/4 cup water |
|
Mix flour and sugar, then stir in with cherries. Pour into pastry shell, dot with butter, and cover with pastry top. Bake slowly for 45 minutes in a 350 degree oven. |
Mix flour and salt. Cut shortening into it until pieces are size of a bean. Mix well with water until dough comes together and can be shaped into a ball. Divide into 2 parts and roll out crusts. Makes two 9-inch pie crusts. |
