This recipe appeared on a 1948 postcard from a series of 16 entitled "Famous Recipes from Famous Eating Places". These cards came free inside packages of Aunt Jemima Pancake Mix.

CHERRY PIE

 

RICH PASTRY PIE CRUST

2 cups fresh Colorado cherries, pitted

 

2 1/2 cups sifted flour

1 1/2 cups sugar

 

1 teaspoon salt

1 tablespoon flour

 

3/4 cup shortening

1 tablespoon butter

 

1/4 cup water

Mix flour and sugar, then stir in with cherries. Pour into pastry shell, dot with butter, and cover with pastry top. Bake slowly for 45 minutes in a 350 degree oven.

 

Mix flour and salt. Cut shortening into it until pieces are size of a bean. Mix well with water until dough comes together and can be shaped into a ball. Divide into 2 parts and roll out crusts. Makes two 9-inch pie crusts.
