Hope's Lemon Meringue Pie

9-inch unbaked pie shell
1 1/2 cups sugar
1/3 cup plus 1 tablespoon cornstarch
1 1/2 cups water
3 egg yolks, beaten
3 tablespoons butter
1/2 cup fresh lemon juice
Meringue (recipe following)


Prepare and bake pie shell. Mix sugar and cornstarch in 2-quart 
saucepan. Stir in water gradually. Cook over medium heat, stirring 
constantly until mixture thickens and boils. Boil and stir 1 minute. 
Remove from heat; stir at least half of the hot mixture gradually 
into beaten egg yolks. Blend into hot mixture in saucepan. Boil and 
stir 1 minute. Remove from heat; stir in butter and lemon juice. Pour 
into baked pie shell.
