Vanilla Pie
1 cup light brown sugar |
1 tablespoon, plus 1 cup all-purpose flour |
1 egg, well beaten |
1/4 cup dark corn syrup |
1 teaspoon vanilla extract |
1 cup water |
1/2 teaspoon cream of tartar |
1/2 teaspoon baking soda |
2 tablespoons butter |
2 tablespoons lard or shortening |
Unbaked 9" pie shell |
Mix 1/2 cup brown sugar, 1 tablespoon flour, the egg, syrup, and vanilla. Gradually add the water, mixing until smooth. Bring to full rolling boil, then set aside to cool. Mix remaining sugar, 1 cup flour, cream of tartar and soda; cut in butter and lard until mixture is crumbly. Pour liquid into pie shell and sprinkle with flour mixture. Bake in preheated 350 degree oven about 40 minutes.
