Ingredients:

Earl's No-Cook Sauce:
From eastern North Carolina, a vinegar-based barbecue sauce...

1 cup apple-cider vinegar
2 tablespoons salt
1/2 teaspoon red pepper
1 teaspoon red pepper flakes
1 tablespoon brown sugar

To prepare Earl's No-Cook Sauce: Combine ingredients. Let stand at least 4 hours. Four weeks is even better.

Enigma Sauce:
From the deep South of Georgia, where folks combine mustard and ketchup in their sauce...

1/3 cup minced onion
2 tablespoons butter
1 cup ketchup
1 cup mustard
1/2 cup water
1/3 cup lemon juice
2 tablespoons Worcestershire sauce
2 tablespoons brown sugar
1/4 teaspoon salt

To prepare Enigma Sauce: Saut&eactute; the onion in butter. Add the remaining ingredients and simmer for 10 minutes.

Johnson Family Sauce:
President Lyndon B. Johnson often entertained his political friends with a barbecue. There are as many sauce recipes attributed to his barbecues as there are tall tales. Here's another one, an example of a Texas-style sauce.

3 cups ketchup
1 cup honey
1 medium onion, chopped fine
1 large green pepper, chopped fine
2 tablespoons Tabasco sauce
2 teaspoons garlic powder
2 tablespoons white vinegar
1/2 cup packed brown sugar
1/2 cup Worcestershire sauce
1/2 cup water

To prepare Johnson Family Sauce: Combine all ingredients and bring the mixture to a boil. Reduce heat and simmer until onion and peppers are tender.

Memphis Sauce:
1 cup tomato sauce
1 cup apple-cider vinegar
1/3 cup Worcestershire sauce
1/3 cup water
1 tablespoon butter
1 small onion, chopped
1-1/2 teaspoons salt
Dash red pepper
Dash black pepper

To prepare Memphis Sauce: Combine in a saucepan and bring to a boil. Simmer on low for 10 minutes.

Pee Dee River Sauce:
Mustard-based South Carolina sauce...

1 large (1-lb., 8-oz.) jar mustard
1 cup mayonnaise
1/2 cup ketchup
2 tablespoons Worcestershire sauce
1 tablespoon brown sugar
1 teaspoon Tabasco sauce
1/4 teaspoon ground black pepper
1 teaspoon seasoned salt
1/4 cup butter
1/2 cup water

To prepare Pee Dee River Sauce: Combine all ingredients in a saucepan. Bring to a boil. Reduce heat and cook uncovered for 8 minutes.

Pork Butt Kicking Sauce:
In the style of western North Carolina...

1 medium onion, minced
3 cups ketchup
2 tablespoons Worcestershire sauce
2 teaspoons chili powder
1 teaspoon cayenne pepper
3/4 cup sugar
1 teaspoon garlic salt
1/2 cup tarragon vinegar

To prepare Pork Butt Kicking Sauce: Combine ingredients and cook over medium-low heat, stirring frequently, for 10 minutes.

Truman Family Sauce:
Kansas City is where the smoke meets the sauce. This particular Kansas City-style sauce is supposed to be as sweet as Bess Truman and as sharp as Harry's tongue.

1 cup apple-cider vinegar
2/3 cup brown sugar
2 cloves garlic, crushed
1/2 cup Worcestershire sauce
1/3 cup water
1 medium onion, chopped
1/2 teaspoon paprika
1 teaspoon cayenne pepper

To prepare Truman Family Sauce: Combine in a saucepan and bring to a boil. Simmer on low for 10 minutes.
