MAMA'S RICE DRESSING
2 cups cooked white rice
2 cups chicken stock
1 tablespoon onion, finely chopped
Salt and black pepper, to taste
2 hard boiled eggs, chopped
2 raw eggs, beat into mixture
Liver, gizzard, and boney parts of chicken
Boil a big, fat hen until tender. Save and use stock later to add to dressing mixture.
To cooked rice, add 2 cups chicken stock, chopped onion, salt and pepper, and chopped boiled eggs. Beat raw eggs into mixture. Add chopped liver, gizzard and chopped chicken to dressing. If mixture is too dry, add more stock to make it juicy.
Place cooked hen in a baking dish or pan. Put dressing inside of hen, then place remaining dressing around sides of hen. Bake until hen is brown, about 30 minutes, in 350 degree oven. Dressing may also be baked in casserole dish.
