Collard Greens 2

1/2 lb. salt pork or smoked turkey
4 lbs. collard greens
pepper pods

Wash greens several times in salt water. Boil meat in two quarts of water. Cook until water gets low. Add greens and pepper pods and return to a boil for about one hour.

Options according to Ebony Cookbook:

Use as little water as possible for best results.

Add 1 tablespoon sugar.

Add celery salt.

Cut some salt pork into small pieces, fry to render fat and add with one quart of water.
