GRANDMA'S GREAT BIG MESS-O-GREENS

 

1 bunch collard greens
1 bunch mustard greens
1 bunch turnip greens
A piece of Slab Bacon, chopped
Chopped Medium Yellow Onion
1 tablespoon Black Strap Molasses

Wash all three bunches of greens well, remove any yellowed leaves and the bigger stems. Using your hands, tear the leaves into smaller pieces and rinse again. Set these aside.

Now, heat up a big stew pot and fry the bacon in it, when it starts turning real crisp, pull it out and add the onions.

Saute the onions in the bacon fat until tender, then start adding greens. once they wilt, add enough water to cover them, then toss back in the bacon , add the molasses and cover.

Cook this at a simmer for about an hour and a half. As the smell fills the kitchen, you'll have plenty of company waiting 'til they are done.
