String Beans and Potatoes
1 pound string beans
1 onion, chopped
2 white potatoes, peeled and quartered
1 teaspoon salt
1/2 teaspoon black pepper
2 cups chicken stock
2 tablespoons butter
1. Remove tips of string beans. Snap or cut beans into 1 inch pieces.
2. In a sauce pan, place the onion, potatoes and string beans. Do not stir.
3. Add the salt, pepper, chicken stock and butter. Cover and simmer over medium heat for 20 minutes until beans are tender. Gently stir and transfer to a serving platter. Serves 4.
