Hot Sausage Jambalaya

2 Lbs. hot smoked sausage               2 bay leaves
1 large onion, chopped                  1 tsp. salt
1 green pepper, chopped                 1/4 tsp. thyme
1/2 c. minced parsley                   1 pinch rosemary
2 c. uncooked rice, water               1/2 tsp. crushed red pepper
2 cloves garlic, chopped                1 med. tomato sauce
1 can Rotel tomatoes


Saute chopped sausage, onions, green peppers, parsley, garlic, about 15
minutes. Add tomato sauce, salt, thyme, rosemary, crushed red pepper. Add
uncooked rice and water to barely cover rice. Do not stir. Cover and bring
to a boil. Reduce heat and cook 30 minutes. Remove cover and heat for 15
minutes to dry jambalaya. Serves 6-8.
