GAZPACHO


INGREDIENTS

1 qt. tomato juice
1 small onion (minced)
2 cups tomatoes (diced)
1 cup green pepper (minced)
1 cucumber (diced)
2 scallions (chopped)
3 T. fresh parsley (finely chopped)
1 garlic clove (minced)
juice of 1 lime
2 T. vinegar (rice or wine work well)
1 t. honey
2 T. olive oil
1 t. basil
dash of hot sauce
salt & pepper (to taste)

Combine all the ingredients and chill for at least 2 hours.
(Serves 4)
[May be served with croutons].
