HEALTH SALAD


INGREDIENTS

1/2 large cabbage
1 bell pepper
1 cucumber (peeled)
1 medium onion
(all thinly sliced)
3/4 cup sugar
1 cup white vinegar
1/2 cup oil (Canola works well)
1/3 cup water
1-1/2 T. salt

Combine the sugar, vinegar, oil, water and salt.
Pour over the vegetables and place in a tightly sealed container.
Refrigerate at least three days. Stir the salad each day.
(Yield: about 2 quarts).
