SHRIMP JAMBALAYA


INGREDIENTS

1 large onion
4 scallions
1/4 cup fresh parsley
1/4 cup bell pepper
2 garlic cloves
All Chopped
1/4 cup oil
8 oz. tomato sauce
1 cup rice
2 cups water or stock
salt, worcestershire & hot sauce to taste
1-1/2 lb. cleaned shrimp

Saute the onions, scallions, parsley and pepper in the oil until the onions are clear.
Add the tomato sauce and garlic and bring to a boil.
Mix in the rice then add the water/stock, salt, sauces and shrimp.
Bring back to a low boil and cook until the water is no longer seen above the rice.
Cover tightly and cook over v-e-r-y low heat for 45 minutes before uncovering.
Uncover and stir with a fork. If the rice is not tender enough re-cover and continue cooking.
