SEAFOOD PAELLA


INGREDIENTS

1/2 lb. shrimp (cleaned)
1/2 lb. sea scallops (cut in 1/2)or 1/2 lb. Monk fish (cubed)
1 doz. little neck clams (in shells)
1 lb. mussels (in shells)
1 onion (finely chopped)
1/2 red bell pepper (chopped)
1/2 cup frozen peas
1/2 cup canned tomatoes (chopped)
1 cup rice
3 T. oil
pinch of saffron or 1/8 t. of Bijole
salt & pepper (to taste)
1-1/2 cups water or stock

In a deep pan saute the pepper and onions in the oil until golden.
Add the tomatoes and continue cooking.
Add the rice and simmer for 10 minutes.
Add all the other ingredients except the saffron and the water, cover and boil fast for 8 minutes.
Stir, then reduce the heat and simmer covered for 8 minutes.
Stir, then add the saffron and the water and simmer covered until all the water is absorbed.
Let rest a few minutes before serving.
