INGREDIENTS
Boil potatoes and carrots in a pot with enough water to cover vegetables with an inch of water. After 10-15 mins. skim the top of the water.

4 large potatoes (peeled & cut into 1" chunks)
2 large carrots (1/4" rings)
1 large onion (diced)
2 T. butter or oil
flour (about 1/4 cup)
salt and pepper to taste
While the potatoes and carrots cook, saute the onions in the oil until they brown.
Sprinkle some of the flour on the onions moving them around to absorb the flour.
Continue this process until the onions/oil have absorbed all the flour they can.
When the potatoes are just tender to a fork, add the onions to the pot and stir.
Salt and pepper to taste and simmer 15 minutes more.
