INGREDIENTS
Slice the zucchini in half lengthwise, scoop out the flesh and chop it up.

2 zucchini (about 8 in. long)
1/4 cup onion (finely chopped)
1/4 cup bell pepper (finely chopped)
1/4 cup mushrooms (chopped)
1 garlic clove (finely chopped)
1/4 cup bread crumbs (Italian flavored work well)
2 T. olive oil
salt & pepper (to taste)
Saute the onions, bell pepper, garlic and zucchini flesh in 1T. of oil for five minutes.
Add the mushrooms and the salt & pepper and continue cooking another five minutes.
Transfer to a bowl and add the bread crumbs and 1 T. of oil. Mix well.
Spoon the mixture into the zucchini shells and bake in a 375 degree oven for 45 minutes.
(Serves 4 as a side dish).
