Saute the onions, garlic and carrots in the oil until the onions are golden (about 10 minutes).
Add the tomatoes, all of the herbs and the sherry and continue to simmer another 10 minutes to reduce the liquid.
Place all the other ingredients (except the salt) in a large pot and bring to a boil.
Add the sauted vegetables and simmer with the cover slightly ajar for one hour.
Salt to taste. Serve with grated Parmesan cheese.
