VEGETARIAN "CHOPPED LIVER"


INGREDIENTS

3/4 c. cooked lentils
1 small onion (finely chopped)
1-1/2 T. oil
4 hard boiled eggs
1 T.(+or-) peanut butter
1 T.(+or-) margarine
salt and pepper to taste

After cooking lentils as per package directions, drain and place in food processor.
Saute the onion in the oil until light brown then add to the lentils.
Add all the other ingredients and process until smooth.
The texture and flavor may be adjusted using more or less peanut butter and margarine.
Additionally, small amounts of left-over cooked vegetables such as green beans may be added for flavor nuances.
