Maggie's Chocolate
Raspberry Cheesecake
This may be the the most fantastic cheesecake you have ever eaten.
It will drive you absolutely nuts and you'll probably eat too much.
Ingredients
1 1/2 cups of crushed graham crackers
1/4 cup of powdered sugar
1/3 cup butter, melted
1 cup fresh or frozen (thawed) raspberries
1/2 teaspoon granulated sugar
3 8oz packages of softened cream cheese
1 14 oz can of sweetened condensed milk
4 eggs
1 teaspoon vanilla
l cup semi-sweet chocolate pieces, melted and cooled
Preparation
Crust: combine crackers and powdered sugar, stir in the butter
and press into pan. Set aside.
Sprinkle sugar over raspberries and set aside.
In a large bowl, beat cream cheese and condensed milk with an
electric mixer until combined. Add eggs and vanilla and beat
until just combined. Divide batter in half. Stir melted
chocolate into half of batter. Pour chocolate batter into
into crust-lined pan. Stir raspberries into remaining
batter. Spoon over the chocolate batter.
Place pan on cookie tray. Bake at 350F for 40-50 minutes
or until center appears nearly set when shaken. Cool in
pan on wire rack for 15 minutes. Remove from pan and
cool completely. Cover & chill at least 4 hours.
