Chicken Casserole

Ingredients:
1 whole chicken
3/4 cup chopped celery
1 med. onion chopped
1 tsp. salt
1/4 tsp. poultry seasoning
1/4 tsp. pepper
1/4 tsp. baking powder
1 egg
1 can cream of mushroom soup
2 T butter
6 slices bread ( 4 cubed for mixture, 2 toasted for topping )


Directions:
   Boil chicken until done. Remove chicken from broth to cool. Put broth in the Frig. to cool, grease will separate from broth and harden on top, broth will gel. This can be done the day before, or first thing in the morning. When ready to prepare, remove broth from Frig. skim grease off top and put in a frying pan, melt, add celery and onion, cook until onions and celery are soft. Remove from heat. Add bread cubes, salt, poultry seasoning, pepper, baking powder. Mix together. Melt broth, add egg, stir slightly, add to bread mixture. Bone chicken and put in a 9 inch casserole dish. Put bread mixture over chicken. Spread 1 can cream of mushroom soup over bread mixture. Toast 2 slices of bread, cube, put butter in frying pan, melt, add toast cubes, sprinkle over top of soup. Bake at 350 degrees for 45-60 mins.
