Spicy Blackened Catfish |

2 tsp sweet paprika |

Combine paprika through black pepper in small bowl. Pat the catfish dry and sprinkle spice mixture on both sides, coating them well. In large skillet, saute garlic in oil until golden brown. Discard garlic. Add butter and heat until foam subsides. Saute the catfish for four minutes on each side, or until heated through. With a slotted spatula, transfer fish fillets to two plates, and serve with two lemon wedges. |

Jo's Comments: MY FAVORITE FISH RECIPE!!!! My comment in my cookbook is "YUMMY in my tummy." I also write, "Ray thinks it sucks--JUST KIDDING!" We have fun writing comments in my cookbook! Would be good served with boiled red potatoes and a salad. |
