Corn and Green Chili Chowder

1 medium onion, chopped
2 Tbl margarine
2 Tbl flour
2 cups water
1 large potato, peeled and diced
1 10-oz package frozen corn
1 4-oz can green chili peppers
1 bouillion  cube, either vegetable or chicken
black pepper, to taste
1/2 tsp cayenne pepper
2 cups milk
2 Tbl. fresh cilantro (or 2 tsp dried parsley)
Cilantro sprigs or jalapeno slices for garnish

In large saucepan, cook onion in hot margarine until tender but not brown.  Stir in flour.   Add water, potato, corn, chili peppers, boullion, pepper, and cayenne.  Bring to boil.  Reduce heat, cover, and simmer ten minutes until potatoes are tender.  Stir in milk and cilantro.  Heat through.   Garnish with sprigs of cilantro and jalapeno slices, if desired.  4 servings.

Jo's Comments: This is a really easy and healthy chowder that is very light.   Yummy! More kick-ass spices could be added, depending on how much "fire" you can handle!
