Fast Fried Rice

3 Tbl vegetable oil
1/4 cup  scallions, green parts sliced at angle
1/2  tsp curry powder
1 green pepper
1 incredible sense of calm (yes that is a joke)
1/4 tsp garlic powder
1/2 tsp salt
4 cups cooked rice (cooked day before if possible!)

In large saucepan, heat oil.  Saute green pepper for five minutes.  Add scalions.  Saute only until warm.  Stir in remaining ingredients.  Serve when heated through.

Jo's Comments: Really fast way to fancify (is that a word?) rice.   The rice really does work better if it was cooked the day before.  Eggs can be added too to make it more authentic...    Incidentally, Ray wrote a grocery list once and this is what he wrote:

1 lb asparagus
1/4 cup snow peas
2 yellow sqush
1 red pepper
1 incredible sense of calm

All ingredients except the last were crossed out.   Hopefully by now he's found a moment to pick up an incredible sense of calm!
