Marinated Vegetable Salad

1 cup sliced mushrooms
3/4 cup halved cherry tomatoes
1/2 cup sliced rip olives
1/3 cup chopped red onion
3 Tbl red wine vinegar
1 Tbl olive oil
1 Tbl chopped parsley
1/2 tsp sugar
1/4 tsp salt
1/4 tsp dried basil
3 cups cooked and cooled rice

Combine musrooms, tomatoes, olives and onions in shallow dish.  Combine vinegar, oil, parsley, sugar, salt, and basil in jar with lid.  Pour over vegetables.  Cover and chill 2-3 hours.  Ad rice and toss lightly.

Jo's Comments: I'm actually not a fan of rice salad (or pasta salad or potato salad) but at one hospital Ray went to during school, he had access to a refrigerator but not a microwave, so I used to make him rice salads and such to take with him.   He said this was his favorite.  Although Ray would say favourite.   He spells it that way.
