Marinated Vegetable Salad |

1 cup sliced mushrooms |

Combine musrooms, tomatoes, olives and onions in shallow dish. Combine vinegar, oil, parsley, sugar, salt, and basil in jar with lid. Pour over vegetables. Cover and chill 2-3 hours. Ad rice and toss lightly. |

Jo's Comments: I'm actually not a fan of rice salad (or pasta salad or potato salad) but at one hospital Ray went to during school, he had access to a refrigerator but not a microwave, so I used to make him rice salads and such to take with him. He said this was his favorite. Although Ray would say favourite. He spells it that way. |
