Sara's Mexican Shrimp Cocktail

1/4 cup ketchup
1/4 cup lime juice
1-2 tsp bottled hot sauce (El Tapatio)
1 lb shrimp
1/2 cup chopped tomato
1/4 cup chopped onion
1/4 cup snipped cilantro
2 avacado

Peel and devein shrimp.  Boil medium pot of water and turn burner off.  When water is no longer boiling, put shrimp in water and cover.  Steep for three minutes.  Drain shrimp

In large bowl, stir together ketchup, lime juice, and hot pepper sauce.  Add shrimp, tomato, onion, and cilantro.  Toss to coat.  Cover and chill for 2-4 hours.

Just before serving, dice avacado into squares.  Add avacados to shrimp mixture.  Enjoy!

Jo's Comments: Sara and I grubbed on this recipe when I went to visit her one time.   YUMMY!  I'm getting hungry now just thinking about it!
