2 Tbl lime juice 3 Tbl olive oil Salt and Pepper, to taste 3/4 lb cherry tomatoes, halved 1/4 cup tomato sauce (I use jarred) 6 oz shredded Gouda cheese 1/2 red pell pepper, stripped 1/2 orange or yellow pepper, stripped 1 serrano or jalapeno chili, minced 1/4 cup cilantro, chopped
Pizza dough for two pizzas

Preheat oven to 500 degrees.
Whisk together lime juice, olive oil, and salt and pepper. Add tomatoes and mix. Let marinate.
Roll out pizza dough and top with tomato sauce and cheese. Add bell peppers and serrano pepper. Bake eight minutes.
Add tomatoes. Bake another 4-6 minutes, until crust is golden. Add cilantro and serve! |

Jo's Comments: This is a favorite pizza recipe of mine and Ray's. I don't remember where I found it, but we adjusted it quite a bit for our preferences. I even made one once to take with me on an airplane because I forgot to order a vegetarian meal--it was even good cold! The tomatoes can be hot, so be careful! |
