Spicy Rice

1/2 cup sliced green onions
1/2 cup minced carrots
1/2 cup minced red pepper
1 jalapeno or serrano pepper, minced
1 Tbl vegetable oil
2 cups cooked brown rice, cooked in veggie broth
2 Tbl chopped cilantro
1 Tbl lime juice
1 tsp soy sauce
Hot sauce (like Tobasco) to taste

Cook onions, carrots, red pepper and jalapeno pepper in oil in a large skillet over medium heat until tender crisp.  Stir in rice, cilantro, lime juice, soy sauce, and pepper sauce.  Cook until heated.

Jo's Comments: Pretty good, flavorful dish.   I like making these dishes for lunch, but it would also be good for dinner with chicken or fish...
