Gini Lynn's Accidental Gumbo



Ingredients:
3 cloves garlic(minced)
1 large chopped onion
Olive oil
4 cups chopped or shredded zucchini
4 cups corn
4 cups salsa
1 lb ground sirloin
4 cups beef broth
herbs and spices to taste
2 cups uncooked rice

Preparation:
Saute onion and garlic in olive oil, add chicken broth,
vegetables and salsa. Let cook until
vegetables are tender.
Serve over rice.

Gini stumbled onto this delicious mode of
preparing gumbo while she was cleaning out the freezer
and thought that the salsa was actually stewed tomatoes. Yum yum, good!
