Tomato Sauce for Pasta
2 tablespoons good quality olive oil
1/2 cup finely chopped onion
1 tablespoon finely minced garlic (5 cloves)
2 (1 lb.) cans crushed tomatoes
1 small can tomato paste
1/4 cup finely chopped parsley
1 teaspoon dried basil, crumbled
1/2 teaspoon dried thyme, crumbled
1 large bay leaf
1/4 cup hearty red wine
4-6 ounces canned mushrooms, drained
Salt and pepper to taste

Saute onion over medium heat until wilted, about 10 minutes. Add garlic and cook a few more minutes. Add other ingredients and simmer for one hour. Serve over 1 pound of pasta and top with freshly grated Parmesan.
