CIOPPINO
1/3 cup olive oil Heat oil in a very large pot, add the onion, cook until almost tender. Add the bell pepper, garlic, wine and seasonings, boil for five minutes. Add tomatoes and tomato sauce, simmer 45 minutes. Then add the seafood(in the shell). Stir several times so that the shellfish is well mixed with the stock. Cook until the shellfish is done-about ten or twenty minutes.
1 large bell pepper(chopped)

1 to 3 TBSP. chopped garlic
1 and 1/2 cups of red wine
1/2 cup of chopped parsley
1 and 1/2 tsp. each of basil and oregano
1/4 tsp. cayenne
1 TBSP. salt(or to taste)
6 ounce can tomato sauce
3 cans italian stewed tomatoes(diced finely)
2 pounds of clams
2 pounds of medium shrimp
2 lobster tails(cut into 1/2 inch spheres)
2 whole crabs(cracked and cleaned)
