Chocolate Chip Pancakes
2 C. buttermilk baking mix
1 C. milk
2 eggs
1/2 C. mini semi-sweet chocolate chips
Combine buttermilk baking mix, milk, and eggs in a medium bowl. Beat with a wooden spoon till smooth. Stir in mini chocolate chips. For each pancake, pour 2 Tbls. batter onto hot, lightly greased griddle. Cook until bubbles appear. Turn and cook other side till lightly browned. For thinner pancakes add 1 Tbls. milk to batter. Pancakes should be at least 1/4 inch thick. Serve warm with butter. Sprinkle with powdered sugar or top with syrup.
