Winning Cocoa Cake
With Peanut Butter Frosting
2 C. sugar
3 eggs
1/2 C. oil
2 C. flour
3/4 C. cocoa
1/2 t. salt
2 tsp. baking soda
2 tsp. baking powder
1 C. black coffee
1 C. milk
2 tsp. almond extract
Preheat oven to 350'. Mix together sugar, eggs, and
oil. In another bowl combine flour, cocoa, salt,
baking soda, and baking powder. Add to egg mix. Add
remaining ingredients and blend till batter is very
smooth. Pour into well greased pans and bake for 30
to 35 minutes. Top with Creamy Peanut Butter
Frosting
Creamy Peanut Butter Frosting
4 Tbls. flour
1 C. milk
pinch salt
1/2 C. shortening
1 C. powdered sugar
1/2 C. peanut butter
1 tsp. vanilla
Combine flour, salt, and milk in saucepan. Stirring
constantly, cook over low heat till thick. Place the
cooked mixture in the refrigerator till completely
cooled. Cream shortening, sugar, and peanut butter.
Gradually add the cooled mixture. After mixing
thoroughly, add 1 tsp. vanilla. Frost cooled
cake.
