2 C. uncooked long grain rice
3 T. veg oil
1 medium green pepper, diced
1 small onion, chopped
1 celery rib, thinly sliced
2 1/4 C. water
1 can (14 1/2 oz) chicken broth
1 medium tomato, diced
1 1/2 tsp. salt
1/2 to1 tsp. ground cumin
1/4 tsp. pepper
1 C, cooked, cubed pork
In a large skillet, saute rice in oil till lightly browned. Add the green pepper, onion and celery; saute for 2-3 minutes. Stir in water, broth, tomato, salt, cumin and pepper. Bring to a boil. Reduce heat, cover and simmer for 18-20 minutes or till rice is tender. Stir in pork, heat through.
Serves 8.
