Hog Maw


2 lb. loose pork sausage
3 potatoes cut into small cubes
1 cleaned maw
Cook potatoes till just tender. Brown meat with favorite herbs, salt, and pepper, till pink disappears. Drain fat. Combine with potatoes and gently mix. Stuff into maw and sew shut any holes. Maw hould be loosely stuffed. Put in a roast pan with 1/2 C. water. Cover and bake at 350' for 1 hour. Prick maw with a fork in several places and bake 45 minutes. longer. Uncover and bake 30 minutes, turn and bake for 30 minutes more.
