Chicken Pot Pie
! chicken, cut up
1/2 C. minced onion
2-3 potatoes, cubed
salt, pepper and favorite spices to taste
2 eggs
4-5 T. milk
2 C. flour
salt and pepper to taste
Put chicken in kettle with enough water to cover, along with seasonings and simmer till tender. Remove chicken and pick meat from the bones. Return meat to the broth. You may add some chicken bouillon, if desired to the broth. Combine flour and salt and pepper. Mix in eggs and milk to make dough. Put on a floured board and roll out to about 1/8 inch thickness. Cut into squares. Put squares on plate, cover and chill for at least 30 minutes. Meanwhile add potatoes to kettle and cook for about 10 minutes or till almost tender. Drop dough squares into boiling broth and cover and simmer for about 20 minutes.
