Salmon Croquettes


1 (14 oz.) can salmon
1 egg, slightly beaten
1/2 C. flour
1 heaping tsp. baking powder
oil for deep frying

Drain all but 1/4 C. liquid from salmon and set the 1/4 C. liquid aside. Put salmon in bowl, remove bones and skin, and break apart with fork. Add flour and egg and some black pepper. Mix well. Add the baking powder to the set aside liquid and beat or whisk till white and frothy. Immediately pour into the salmon mixture and stir till well blended. Spoon teaspoonfuls into hot oil and fry till golden brown. Drain on paper towels and then serve.
