Chewy Lemon Honey Cookies


2 C. flour
1 1/2 tsp. baking soda
1/2 C. honey
1/3 C. margarine, softened
1/4 C. sugar
1 T. grated lemon peel
1/4 C. egg substitute

lemon glaze:
1 C. powdered sugar
2 T. lemon juice

Mix flour and baking soda and set aside. In a bowl with mixer, beat honey, margarine, sugar and lemon peel till creamy. Add egg substitute and mix well. Slowly add flour mixture till blended. Drop dough by rounded teaspoonfuls on a greased baking sheet about 2 inches apart. Bake at 350' for 7-8 minutes or till lightly browned. Remove and cool on wire rack. Stir together glaze ingredients. Drizzle with lemon glaze.
