Chocolate Pudding
Chocolate Pudding
2/3 C. sugar
1/3 C. cocoa
2 1/2 T. cornstarch
pinch salt
2 C. 1% milk
1 T. margarine
1 tsp. vanilla
In a saucepan, mix sugar, cocoa, cornstarch and salt. Slowly add 1 C. milk, stirring till smooth. Stir in remaining milk. Bring to a boil, stirring constantly, about 2 minutes. Reduce heat and cook, stirring till pudding becomes smooth and thick. Remove from heat and add margarine and vanilla. Stir and pour into custard cups or a big bowl. Cover with plastic wrap. Place plastic wrap directed on surface of pudding to prevent a skin from forming. Serves 4
