Crispy Critter Chicken

1 T. margarine
1 1/4 C. Hungery Jack Instant Potato Flakes
1/2 C. grated Parmesan cheese
1/4 tsp. salt
black pepper to taste
4 boneless, skinless chicken breast halves
2 eggs, beaten

Preheat oven to 425'. Melt margarine in a baking dish. Mix potato flakes, cheese and spices. Dip chicken in beaten eggs, roll in flakes, put in baking dish and bake 50 minutes or till done. Serves 4.
