Easy Peanut Butter Cookies

1 2/3 C. flour
1 1/2 T. cornstarch
1 3/4 tsp. baking powder
1/2 tsp. baking soda
3/4 C. brown sugar
1/4 C. oil
1/4 C. sugar
1/4 C. creamy peanut butter
1 1/2 T. light corn syrup
2 1/2 tsp. vanilla
1 egg
3 T. granulated sugar

Heat oven to 375'. In a bowl, mix flour, cornstarch, baking powder and baking soda. Mix well and set aside. In another bowl, mix brown sugar, oil, 1/4 C. sugar, and peanut butter. Beat till well blended. Add corn syrup, vanilla and egg. Beat well. Stir in flour mix. Coat hands with cooking spray and shape dough into 1 inch balls. Roll balls in the 3 T. granulatd sugar and put 2 inches apart on a greased baking sheet. Flatten with the bottom of a glass and bake for 7 minutes or till browned. Remove and cool on wire rack.
