Hot Water Gingerbread
Hot Water Gingerbread
1 C. flour
1/2 C. sugar
1 tsp. salt
1 tsp. ginger
1/2 tsp. baking soda
1 egg
1/2 C. molasses
1/2 C. hot water
1 T. margarine, softened
Topping:
2 T. sugar
2 tsp. cinnamon
Cool Whip
Mix all dry cake ingredients. In another bowl, beat egg, molasses, water and margarine. Beat till smooth. Slowly add the dry ingredients. Beat 1 minute. Pour into an 8 x 8 inch pan that has been sprayed with cooking spray. Mix sugar and cinnamon and sprinkle over batter. Bake at 350' for 25 minutes or till cake tests done with a toothpick. Cool completely before cutting. Top with Cool Whip. Serves 9.
