Neopolitan Potatoes


5 potatoes
2 tomatoes, seeded and chopped
2 garlics, minced
1 C. mozzarella cheese
2 T. chopped green onion
2 T. olive oil
2 T. chopped fresh basil
1/2 tsp. salt
1/4 tsp. pepper

Peel, cube and cook potatoes till tender. Drain and cool slightly. Mix with remaining ingredients and toss. Cover and refrigerate 1-2 hours for flavors to blend. This is good warm too.
