Pasta Fresca


4 C. chopped tomatoes
8 large basil leaves
1 clove minced garlic
1 T. olive oil
salt and pepper to taste
1 lb. bow-tie pasta
3/4 C. low-fat Mozzarella cheese
grated Parmesan cheese

Chop 2 tomatoes and set aside. In a food processor, puree remaining tomaotes, basil, garlic and oil. Process till smooth. Add salt and pepper to taste. Make pasta as directed and drain. Add Mozzarella to the pasta and toss. Add sauce and toss. Top with chopped tomatoes and Parmesan cheese. Serves 5.
