Potato Crusted Chicken
4 boneless, skinless chicken breasts halves
1 C. 1% milk
1 C. Hungry Jack instant potato flakes
1/4 C. low-fat sour cream
1 T. fresh minced parsley
1/2 tsp. dry tarragon
dash salt
paprika
Spray a baking pan with cooking spray. Put chicken in and bake at 375' for 20 minutes. Drain. In saucepan heat milk till almost boiling. Remove from heat and stir in potato flakes, sour cream, parsley, tarragon, and salt. Blend well. Spread potato mix on top of baked meat and sprinkle with paprika. Bake 30 minutes more or till done. Serves
