Potato Crusted Pork Or Chicken


lean pork pieces or boneless, skinless chicken breasts or tenders
1 C. milk
1 C. instant potato flakes (Hungary Jack)
1/4 C. sour cream
1 T. parsley
1/2 tsp. dry tarragon
1/8 tsp. lite salt-optional
paprika

Spray baking pan with cooking spray. Put meat in and bake at 375' for 20 minutes. Drain fat. In a saucepan heat milk till almost boiling. Remove from heat and stir in potato flakes, sour cream, parsley, tarragon, and lite salt. Blend well. Spread potato mix on top of baked meat and sprinkle with paprika. Bake 30 minutes more or till done.
