Sauteed Chicken And Tomatoes


4 boneless, skinless chicken breasts
1/8 tsp. lite salt
1 shallot, sliced
1 garlic clove, minced
thinly sliced tomato
1/2 C. shredded Mozzarella
1 T. minced freah basil

Rinse chicken, pat dry, and sprinkle with lite salt. Heat a small bit of oil in a skillet and add chicken, shallot, and garlic. Cook 8 minutes or till chicken is done, turning once. Place tomato slice on chicken and sprinkle with basil and cheese. Cover skillet and heat till cheese melts. Serves 4.
