Aioli

14 - 18 cloves of garlic
2 egg yolks
2 cups olive oil
salt
1 tspn. dijon mustard
2 lemons

In a blender puree the garlic with a little salt and touch of olive oil. When the garlic is pureed, add the eggs and mix thoroughly. Then slowly add the olive oil, a drop at a time until it is all mixed. Then add the dijon and lemon juice and serve. Note: this may be strong for some so adjust the amount of garlic accordingly. This is a great accompaniment to a fish stew or lentil dish.
