6 to 8 servings Blanch tomatoes. This means to dunk tomatoes in boiling water for 30 seconds to loosen skins; then immerse in cold water. Skins will slip off. Chop tomatoes(approximately 3 cups). In a large mixing bowl combine tomatoes, cucumber, greenand red bell peppers, celery, parsely, onions, and garlic. Stir in chicken broth, lemon juice, sugar, salt, olive oil, pepper, and hot sauce. Cover; chill in refrigerator. Garnish each serving with Farout Foods Durty Finger Croutons(see garnish page ? ). HinT: For a smother soup combine a third to half of all the ingredients except the croutons into a blender or food processor and blend until smooth. Combine with remaining ingredients and chill thoroughly. |
