Green Beans In Green
1/2 lb of green beans (your choice)
1/3 lb of tomatillos (fresh)
1 medium red onion
1 bunch of green onions
1 tablespoon of fresh sage
1-2 ounces of tamari
black pepper (fresh ground) to taste
1) Chop the green beans into desired size
Tomatillos need to be peeled, rinsed, then julienned
Red onion cut large julienne
Sage chopped fine.
2) Saute' the red onion and tomatillos in oil, medium high heat
Add green beans in 3-4 minutes
Lower heat to medium and continue to cook
When green beans are almost to desired doneness add sage, black pepper and
green onion
deglaze with white wine along the way, and tamari for the final deglazing.
3) The tomatillos will cook down almost loosing all form
This will create a saucy juice for the green beans
Use less sage for a more mellow dish.
