Shredded chicken wrapped in corn tortillas topped with melted Monterey jack and green chili enchilada sauce.

4 boneless chicken breast, shredded
1 19 oz. can green enchilada sauce
1 4 oz. can diced chilies
1 bunch fresh coriander
12 corn tortillas
1 bunch scallions
1/2 pound Monterey Jack
1/2 cup olive oil
1 Tbls. black pepper
1 tsp. cumin
1/2 Tbls. cayenne
